The Story Behind It

The Tale of Tzatziki with Grilled Pita

Story updated

Tzatziki, a garlicky yogurt-and-cucumber dip, descends from similar cold yogurt sauces found across the former Ottoman world, such as Turkish cacık and Persian mast-o-khiar. Greece adapted its own version with dill or mint, and it's now inseparable from Greek taverna cooking.

Ingredients

Scale:· 4 servings
  • 2 cups Greek yogurt
  • 1 cucumber, grated and squeezed dry
  • 2 cloves garlic, grated
  • 2 tbsp olive oil, plus more for drizzling
  • 1 tbsp white wine vinegar
  • 1 tbsp chopped fresh dill
  • Salt to taste
  • 4 pita breads

Instructions

  1. 1Stir together yogurt, grated cucumber, garlic, olive oil, vinegar, dill, and salt.
  2. 2Cover and refrigerate at least 30 minutes to let the flavors meld.
  3. 3Brush pita breads lightly with olive oil and grill 1-2 minutes per side until warmed and lightly charred.
  4. 4Drizzle the tzatziki with a little more olive oil and serve alongside the warm pita for dipping.
