The Story Behind It

The Tale of Pork Souvlaki

Story updated

Souvlaki, skewered and grilled meat, has ancient roots in Greece; archaeological finds and references in Homer and Aristophanes suggest Greeks were skewer-grilling meat over open flames millennia before the modern fast-food version became a staple street food in the 20th century.

Ingredients

Scale:· 4 servings
  • 2 lb pork shoulder, cut into 1-inch cubes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • Salt and black pepper
  • 4 pita breads
  • 1 cup tzatziki
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced

Instructions

  1. 1Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. 2Toss pork cubes in the marinade and refrigerate at least 1 hour, or overnight.
  3. 3Thread pork onto skewers, discarding excess marinade.
  4. 4Grill over high heat, turning occasionally, 12-15 minutes until charred and cooked through.
  5. 5Warm the pita breads on the grill for the last minute.
  6. 6Fill pitas with souvlaki, tzatziki, tomato, and red onion, and serve.
