Ingredients

  • 1 lb bucatini or ziti pasta
  • 3 tbsp butter, divided
  • 1/2 cup grated parmesan, divided
  • 1 egg white, beaten
  • 1 1/2 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 1/2 cup red wine
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 4 tbsp butter (for béchamel)
  • 4 tbsp flour
  • 3 cups warm milk
  • 2 egg yolks

Instructions

  1. 1Boil pasta until just shy of al dente, drain, and toss with 1 tablespoon butter, a quarter cup parmesan, and the egg white.
  2. 2Brown the ground beef with onion and garlic, then stir in tomatoes, wine, cinnamon, and cloves; simmer 20 minutes.
  3. 3Make the béchamel by melting butter, whisking in flour, then gradually adding warm milk until thickened; whisk in egg yolks off heat.
  4. 4Spread half the pasta in a buttered baking dish, top with the meat sauce, then the remaining pasta.
  5. 5Pour the béchamel over the top and sprinkle with remaining parmesan.
  6. 6Bake at 375°F for 40-45 minutes until golden and set.
  7. 7Rest 15 minutes before cutting into squares.
