The Tale of Horiatiki (Greek Village Salad)

Story updated

Horiatiki, the "village salad" known abroad as Greek salad, is actually a fairly modern creation, popularized in the mid-20th century as tourism to Greece grew; its combination of tomato, cucumber, olives, and feta (notably without lettuce) became an internationally recognized symbol of Greek cuisine.

Ingredients

  • 1 cucumber, sliced into half-moons
  • 1 green bell pepper, sliced into rings
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 7 oz block feta cheese
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and black pepper

Instructions

  1. 1Combine tomatoes, cucumber, bell pepper, red onion, and olives in a large bowl.
  2. 2Drizzle with olive oil and vinegar, then season with salt, pepper, and half the oregano; toss gently.
  3. 3Transfer to a serving platter and place the whole block of feta on top.
  4. 4Sprinkle the feta with the remaining oregano and a drizzle of olive oil, and serve with crusty bread.
