The Tale of Horiatiki
Horiatiki, Greek "village salad" of tomatoes, cucumber, onion, olives, and feta, developed as a simple, seasonal dish reflecting rural Greek agriculture and the Mediterranean diet's reliance on fresh vegetables, olive oil, and cheese. Notably, it traditionally contains no lettuce, a distinction from the "Greek salads" often served abroad.
Ingredients
Scale:· 4 servings
- 4 tomatoes, cut into wedges
- 1 cucumber, sliced
- 1 green bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives
- 1 block feta cheese
- 1/4 cup extra-virgin olive oil
- 1 tsp dried oregano
- 1 tbsp red wine vinegar
- Salt
Instructions
- 1Combine the tomato wedges, cucumber, bell pepper, red onion, and olives in a large bowl.
- 2Toss gently with olive oil, a splash of vinegar, and salt.
- 3Transfer to a serving plate.
- 4Place a whole block of feta on top of the salad rather than crumbling it.
- 5Sprinkle the feta and salad with dried oregano and a drizzle of extra olive oil.
- 6Serve with crusty bread to mop up the juices.
