The Story Behind It

The Tale of Rouladen

Story updated

Rouladen, thin beef slices rolled around bacon, onion, mustard, and pickle, is a traditional German Sunday dinner dish found with regional variations across the country. It reflects a common European technique of stretching modest ingredients, a little meat wrapped around flavorful fillings, into a special-occasion meal.

Ingredients

Scale:· 4 servings
  • 4 thin slices beef top round
  • 2 tbsp Dijon mustard
  • 4 slices bacon
  • 1 onion, sliced
  • 4 baby dill pickles, quartered lengthwise
  • 2 tbsp vegetable oil
  • 2 cups beef stock
  • 2 tbsp flour
  • Salt and pepper to taste

Instructions

  1. 1Season beef slices with salt and pepper, then spread each with mustard.
  2. 2Layer bacon, onion, and pickle spears on each slice.
  3. 3Roll up tightly and secure with kitchen twine or toothpicks.
  4. 4Brown the rolls on all sides in oil in a Dutch oven.
  5. 5Add beef stock, cover, and braise 1.5 hours until tender.
  6. 6Remove rolls, whisk flour into the liquid to thicken into a gravy, and serve over the rouladen.
