The Tale of Satsivi
Satsivi, chicken or turkey in a thick, spiced walnut sauce, showcases Georgia's centuries-old culinary use of walnuts, historically abundant in the Caucasus region and central to many classic Georgian dishes. It's traditionally served cold or at room temperature and is a fixture of Georgian holiday feasts, especially around New Year's.
Ingredients
Scale:· 6 servings
- 3 lb whole chicken, cut into pieces
- 2 cups ground walnuts
- 5 cloves garlic
- 1 onion, chopped
- 2 cups chicken stock
- 2 tbsp vinegar
- 1 tsp ground coriander
- 1 tsp blue fenugreek
- 1 tsp paprika
- Salt, to taste
Instructions
- 1Simmer the chicken pieces in salted water with onion until cooked through and tender, about 30 minutes, reserving the stock.
- 2Saute the remaining onion until soft.
- 3Blend the ground walnuts with garlic, spices, and about 2 cups of the reserved chicken stock until smooth.
- 4Combine the walnut mixture with the sauteed onion in a pot and heat gently, stirring, until it thickens slightly, being careful not to boil hard.
- 5Add the vinegar and season with salt.
- 6Pour the sauce over the cooked chicken pieces and let sit to absorb the flavor.
- 7Serve at room temperature or slightly warm.
