The Story Behind It

The Tale of Lobio

Story updated

Lobio, a kidney bean stew, is a staple of Georgian cuisine especially associated with the mountainous regions, where beans have long served as an accessible, affordable protein source. It's traditionally served with cornbread (mchadi) and pickled vegetables.

Ingredients

Scale:· 4 servings
  • 2 cups red kidney beans, soaked overnight
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup walnuts, chopped
  • 1 tsp ground coriander
  • 1/2 tsp dried fenugreek (utskho suneli)
  • Fresh cilantro, chopped
  • 2 tbsp oil
  • Salt and pepper, to taste

Instructions

  1. 1Boil the soaked kidney beans in fresh water until tender, about 40 minutes; drain, reserving some liquid.
  2. 2Heat oil and sauté onion and garlic until soft.
  3. 3Add the cooked beans, walnuts, coriander, and fenugreek, mashing some of the beans for a creamy texture.
  4. 4Add a little reserved cooking liquid to reach a thick, stew-like consistency.
  5. 5Simmer 10 minutes to let the flavors meld, seasoning with salt and pepper.
  6. 6Garnish with fresh cilantro and serve with cornbread or crusty bread.
