The Tale of Superkanja (Okra and Palm Oil Stew)
Story updated
Superkanja, an okra stew enriched with palm oil, fish, and meat, follows the same mucilaginous okra-stew tradition found across the Gambia and neighboring Senegambia, where okra has been cultivated for centuries. It's typically served over rice, prized for the thick, silky texture the okra lends the sauce.
Ingredients

- 1 lb beef and smoked fish, cut into pieces
- 1/2 cup palm oil
- 1 onion, chopped
- 2 tbsp ground crayfish
- 1 scotch bonnet pepper, minced
- 3 cups water or beef stock
- Cooked rice, for serving

- 1Simmer the beef with onion in water until tender, about 25 minutes.
- 2Add the chopped okra, palm oil, crayfish, and scotch bonnet to the pot.
- 3Simmer 20 minutes, mashing the okra slightly, until the stew turns thick and glossy.
