The Tale of Soupe Odika
Soupe odika, thickened with ground wild mango (dika) seeds, is a distinctly Central African dish using a forest ingredient prized across Gabon and Cameroon for its nutty flavor and natural thickening properties, similar in role to okra in other regional soups. It's typically cooked with fish or meat and reflects Gabon's reliance on forest-foraged ingredients.
Ingredients

- 1.5 cups ground odika (wild mango) seeds
- 1.5 lb beef or smoked fish
- 1 onion, chopped
- 3 cloves garlic
- 2 tbsp tomato paste
- 1 chili pepper
- 2 tbsp palm oil
- Salt, to taste
- 3 cups water
Instructions
- 1Simmer the meat or smoked fish in water with onion, garlic, and salt until tender, reserving the broth.
- 2Mix the ground odika seeds with a little warm broth to form a paste.
- 3Heat the palm oil in a pot, add the tomato paste and chili, and cook briefly.
- 4Stir in the odika paste and remaining broth, whisking to combine.
- 5Add the cooked meat or fish and simmer gently 20-25 minutes, stirring occasionally, until the soup thickens into a sticky, glossy sauce.
- 6Season with salt.
- 7Serve with rice or fufu.
