The Story Behind It

The Tale of Salade Niçoise

Story updated

Salade Niçoise comes from Nice on the French Riviera, traditionally built from raw seasonal vegetables, olives, and anchovies rather than the cooked potatoes and green beans many modern versions include. Purists still debate what belongs in an 'authentic' Niçoise salad, a disagreement that itself reflects the dish's deep local roots.

Ingredients

Scale:· 4 servings
  • 2 fresh tuna steaks, seared (or 2 cans good tuna)
  • 8 oz green beans, trimmed
  • 1 lb baby potatoes, boiled
  • 4 eggs, hard-boiled and halved
  • 2 tomatoes, quartered
  • 1/2 cup Niçoise olives
  • 4 anchovy fillets
  • 1/2 red onion, thinly sliced
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard

Instructions

  1. 1Blanch green beans in boiling water until crisp-tender, then shock in ice water.
  2. 2Boil potatoes until fork-tender and halve while warm.
  3. 3Whisk olive oil, vinegar, and mustard for the dressing.
  4. 4Sear tuna steaks briefly in a hot pan, keeping the center pink, then slice.
  5. 5Arrange green beans, potatoes, tomatoes, eggs, olives, onion, and anchovies on a platter.
  6. 6Top with sliced tuna and drizzle with dressing.
