The Tale of Poronkaristys

Poronkaristys, sautéed reindeer meat, is a specialty of Finnish Lapland tied to the Sámi people's centuries-old tradition of reindeer herding, which remains central to the region's culture and economy. Thinly sliced and slow-cooked in butter, it's traditionally served with mashed potatoes and lingonberry sauce.

Ingredients

Scale:· 4 servings
  • 1.5 lb thinly sliced reindeer meat (or substitute venison or beef)
  • 3 tbsp butter
  • 1 cup beef stock
  • 4 allspice berries, crushed
  • 4 juniper berries, crushed
  • Salt and black pepper
  • Mashed potatoes and lingonberry jam, for serving

Instructions

  1. 1Heat the butter in a heavy pan or cast-iron skillet until foaming.
  2. 2Add the thinly sliced reindeer in batches and sear quickly over high heat.
  3. 3Return all the meat to the pan and add the crushed allspice and juniper berries.
  4. 4Pour in the stock and simmer 10-15 minutes until the liquid reduces and the meat is tender.
  5. 5Season with salt and pepper.
  6. 6Serve over mashed potatoes with a spoonful of lingonberry jam and pickles.
