The Tale of Duruka Stir-Fry

Duruka, sometimes called "Fiji asparagus," is the edible flowering stalk of a sugar cane relative unique to the islands, harvested seasonally and prized as a local delicacy. Stir-frying it with garlic, chili, and other seasonings is a popular way to showcase this distinctly Fijian ingredient, which has no close equivalent outside the Pacific.

Ingredients

Scale:· 4 servings
  • 4 cups duruka (Fijian wild asparagus), trimmed and sliced
  • 1 cup coconut cream
  • 1 onion, sliced
  • 2 cloves garlic
  • 1 chili, chopped
  • Salt, to taste

Instructions

  1. 1Trim the tough ends from the duruka stalks and slice into rounds.
  2. 2Blanch in boiling water 3-4 minutes, then drain.
  3. 3Heat a pan and saute the onion, garlic, and chili until fragrant.
  4. 4Add the duruka and stir-fry 3-4 minutes.
  5. 5Pour in the coconut cream and simmer 5 minutes until slightly thickened.
  6. 6Season with salt and serve as a side dish with grilled fish and rice.
