The Tale of Sishwala
Sishwala is a thick maize porridge that forms the everyday starchy base of Swazi meals, much like ugali or pap elsewhere in Southern Africa. Maize became the region's dominant staple only after its introduction from the Americas centuries ago, gradually displacing older sorghum- and millet-based porridges, though those grains remain part of the culinary heritage.
Ingredients
Scale:· 6 servings
- 2 cups maize meal or sorghum meal
- 5 cups water
- 1 tsp salt
- 2 tbsp butter or fat, optional, for richness
- Extra water, for adjusting consistency
- Emasi (fermented milk), for serving
Instructions
- 1Bring the water and salt to a boil in a heavy pot.
- 2Stir in a portion of the meal to make a loose porridge and let cook 5 minutes.
- 3Gradually stir in the remaining meal, beating continuously to avoid lumps.
- 4Reduce the heat and cook, stirring often, 20-25 minutes until thick and smooth and pulling away from the sides of the pot.
- 5Serve hot as an accompaniment to stews or sour milk (emasi).
