The Tale of Rosolje
Rosolje, a beet-and-potato salad with pickled herring or other fish, developed within the wider Baltic and Russian tradition of beet salads related to Russian vinegret, shaped by Estonia's history of cultural exchange with its neighbors. Its vivid pink color, from beets staining the other ingredients, makes it a festive dish popular around Christmas and New Year's.
Ingredients
Scale:· 6 servings
- 3 boiled potatoes, cubed
- 2 boiled beets, cubed
- 2 pickled cucumbers, diced
- 1 apple, diced
- 1 cup cooked herring or ham, diced
- 3 hard-boiled eggs, chopped
- 1 cup sour cream
- 1/2 cup mayonnaise
- Salt and pepper
Instructions
- 1Combine the cubed potatoes, beets, cucumbers, apple, and herring or ham in a large bowl.
- 2Fold in half of the chopped egg.
- 3Mix the sour cream and mayonnaise together, and season with salt and pepper.
- 4Fold the dressing gently into the salad until evenly coated (the beets will tint everything pink).
- 5Chill at least 1 hour.
- 6Garnish with the remaining egg before serving.
