The Tale of Kama
Kama, a mix of roasted ground barley, rye, oat, and pea flours, is one of Estonia's oldest traditional foods, historically valued as a quick, portable, energy-dense food that required no cooking — just mixing with buttermilk, kefir, or water. It remains a beloved traditional snack or light dessert, often sweetened and topped with berries.
Ingredients
Scale:· 4 servings
- 1 cup kama flour (toasted barley, rye, oat, and pea flour mix)
- 3 cups buttermilk or kefir
- Sugar or honey, to taste
- Fresh berries, for topping
- Pinch of salt
- A splash of cold water, to thin if needed
- A few mint leaves, for garnish, optional
Instructions
- 1Pour the buttermilk or kefir into serving bowls or glasses.
- 2Whisk in the kama flour gradually until smooth and slightly thickened, resembling a thin porridge.
- 3Sweeten with sugar or honey to taste.
- 4Let stand 5 minutes to thicken further.
- 5Top with fresh berries.
- 6Serve chilled.
