Ingredients

  • 3 lbs beef tripe and cow foot, cleaned
  • 2 ears corn, cut into chunks
  • 1 yuca root, peeled and cubed
  • 1 chayote, cubed
  • 1 green plantain, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 bunch cilantro
  • Salt and black pepper, to taste
  • Lime wedges, for serving

Instructions

  1. 1Simmer the tripe and cow foot in a large pot of water for 2-2 1/2 hours, until tender, skimming as needed.
  2. 2Cut the cooked tripe and meat from the foot into bite-sized pieces.
  3. 3Sauté onion and garlic, then stir in tomato sauce and add to the pot with the broth.
  4. 4Add corn, yuca, chayote, and plantain, and simmer 30-40 minutes until tender.
  5. 5Return the cut tripe and meat to the pot and simmer 10 more minutes.
  6. 6Stir in chopped cilantro and season with salt and pepper.
  7. 7Serve hot with lime wedges.
