The Tale of Pupusas Revueltas
Pupusas are El Salvador's national dish, thick corn masa cakes stuffed with fillings, with roots tracing back to pre-Columbian Indigenous Pipil (Nahua) cooking traditions in the region. Pupusas revueltas, the "mixed" version, combine cheese, refried beans, and pork chicharrón in one pupusa, a popular variation sold at pupuserías across the country.
Ingredients
Scale:· 4 servings
- 3 cups masa harina
- 2 cups warm water
- 1 tsp salt
- 2 cups shredded quesillo or mozzarella cheese
- 1 cup refried red beans
- 1 cup cooked ground pork chicharron, finely chopped
- Vegetable oil for the griddle
- Curtido, for serving
- Salsa roja, for serving
Instructions
- 1Mix masa harina with warm water and salt into a soft, pliable dough.
- 2Let the dough rest, covered, for 10 minutes.
- 3Combine the refried beans, cheese, and chopped chicharron for the filling.
- 4Divide the dough into golf-ball sized portions and flatten each into a disc.
- 5Place about 2 tablespoons of filling in the center, fold the edges up to seal, and gently pat back into a flat disc.
- 6Cook on a hot, lightly oiled griddle 3-4 minutes per side until golden spots appear.
- 7Serve hot with curtido and salsa roja.
