The Story Behind It

The Tale of Om Ali (Egyptian Bread Pudding)

Story updated

Om Ali, a warm bread or pastry pudding baked with milk, nuts, and raisins, is often linked by popular legend to a 13th-century Mamluk sultana named Shajar al-Durr, though the story's historical accuracy is debated. Regardless of its true origin, it has long been treasured as Egypt's classic comfort dessert.

Ingredients

Scale:· 8 servings
  • 1 sheet puff pastry, baked and torn into pieces (or 8 cups stale croissants)
  • 4 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup mixed nuts (pistachios, almonds, walnuts), chopped
  • 1/2 cup raisins
  • 1/4 cup shredded coconut

Instructions

  1. 1Preheat oven to 375°F.
  2. 2Scatter the torn baked pastry pieces into a large baking dish along with nuts, raisins, and coconut.
  3. 3Heat milk, cream, sugar, and vanilla together until sugar dissolves and the mixture is hot.
  4. 4Pour the warm milk mixture evenly over the pastry, pressing down gently so it soaks in.
  5. 5Bake 20-25 minutes until the top is golden and bubbling.
  6. 6Serve warm, spooned into bowls.
