Dominican (Commonwealth) Bakes and Saltfish

Ingredients
- 400g salted cod, soaked overnight and drained
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp butter or oil
- 3/4 cup water
- 1 onion, sliced
- 1 tomato, chopped
- 1 scotch bonnet pepper, minced
- 2 tbsp vegetable oil
- Vegetable oil, for frying bakes
Instructions
- 1Boil the soaked salted cod in fresh water for 15-20 minutes to further reduce saltiness, then drain, cool, and flake the fish, discarding skin and bones.
- 2Heat vegetable oil in a pan and sauté the onion, tomato, and scotch bonnet pepper until softened.
- 3Add the flaked saltfish to the pan and cook, stirring, until well combined and heated through, about 5-8 minutes.
- 4For the bakes, combine flour, baking powder, and salt in a bowl, then rub in the butter until crumbly.
- 5Gradually add water, kneading until a smooth, soft dough forms; divide into small balls and flatten into discs.
- 6Heat oil in a deep pan and fry the bake discs until puffed and golden brown on both sides, about 3-4 minutes per side.
- 7Drain the fried bakes on paper towels.
- 8Split each bake open and fill with a generous spoonful of the saltfish mixture, serving warm.
