Danish Rødgrød med Fløde

Ingredients

  • 500g mixed red berries (strawberries, raspberries, red currants)
  • 3/4 cup sugar
  • 3 cups water
  • 3 tbsp cornstarch mixed with 1/4 cup cold water
  • 1 cup heavy cream, for serving
  • Sliced almonds, for garnish (optional)

Instructions

  1. 1Combine the mixed berries, sugar, and water in a saucepan and bring to a gentle boil.
  2. 2Simmer for 10-15 minutes until the berries have softened and released their juices, mashing lightly if needed.
  3. 3Strain the mixture through a fine sieve if a smoother pudding is preferred, pressing to extract as much liquid as possible, or leave slightly chunky if preferred.
  4. 4Return the liquid to the saucepan and bring back to a gentle simmer.
  5. 5Stir in the cornstarch slurry gradually, whisking constantly, and cook until the mixture thickens to a pudding-like consistency, about 3-5 minutes.
  6. 6Pour into individual serving bowls or glasses and chill in the refrigerator for at least 2 hours until fully set.
  7. 7Just before serving, pour a generous splash of cold heavy cream over each portion.
  8. 8Garnish with sliced almonds if desired and serve chilled.
