Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs, separated
  • 2 cups buttermilk
  • 3 tbsp melted butter, plus more for cooking
  • Powdered sugar and jam, for serving

Instructions

  1. 1In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. 2In a separate bowl, whisk the egg yolks with buttermilk and melted butter, then stir into the dry ingredients until just combined.
  3. 3In a clean bowl, whip the egg whites to soft peaks, then gently fold them into the batter to lighten it.
  4. 4Heat an æbleskiver pan over medium heat and add a small dab of butter into each round indentation.
  5. 5Pour batter into each indentation until about three-quarters full.
  6. 6Once bubbles form and the edges set, use a knitting needle or skewer to rotate each ball a quarter turn, allowing the raw batter to flow into the pan.
  7. 7Continue rotating every minute or so until the ball is fully round and cooked through, golden on all sides, about 5-6 minutes total per batch.
  8. 8Serve warm, dusted with powdered sugar and with jam for dipping.
