The Story Behind It

The Tale of Trdelník

Story updated

Trdelník, a sugar-and-nut-coated spit cake, has a documented history in the Czech town of Skalica and nearby regions, likely connected to older Transylvanian chimney-cake traditions like kürtőskalács. Its current fame as "Prague street food" is largely a modern tourism-era phenomenon rather than a historic Prague tradition.

Ingredients

Scale:· 8 servings
  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm milk
  • 1/4 cup sugar, plus more for coating
  • 2 eggs
  • 1/3 cup melted butter
  • 1/2 tsp salt
  • 1 cup ground walnuts mixed with cinnamon sugar, for coating

Instructions

  1. 1Dissolve yeast and a pinch of sugar in warm milk and let sit 10 minutes until foamy.
  2. 2Mix in flour, remaining sugar, eggs, melted butter, and salt, and knead into a smooth dough.
  3. 3Let rise 1 hour until doubled.
  4. 4Divide the dough and roll into long ropes, then wind each rope around a floured wooden roller or cylinder.
  5. 5Roll the wrapped dough in sugar and grill over hot coals or under a broiler, turning constantly, until golden and crisp.
  6. 6Roll the hot pastry in the walnut-cinnamon sugar mixture.
