Czech Bramboráky (Potato Pancakes)

Ingredients
- 1 kg potatoes, peeled and grated
- 2 eggs
- 3 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1 tsp marjoram
- 1/2 tsp caraway seeds
- Vegetable oil, for frying
- Salt and black pepper to taste
Instructions
- 1Grate the potatoes finely and squeeze out as much excess liquid as possible using a clean kitchen towel.
- 2In a large bowl, combine the grated potatoes with eggs, garlic, flour, marjoram, caraway seeds, salt, and pepper, mixing until you have a thick, cohesive batter.
- 3Heat a generous layer of vegetable oil in a large skillet over medium heat.
- 4Spoon portions of the batter into the pan, flattening each into a thin round pancake.
- 5Fry for 3-4 minutes per side until deeply golden brown and crisp at the edges, with the potato cooked through.
- 6Drain on paper towels and keep warm while frying the remaining batter.
- 7Serve hot on their own, or with a dollop of sour cream or a bowl of goulash for dipping.
