The Story Behind It

The Tale of Trahana Soup

Story updated

Trahana, a fermented mixture of cracked wheat and yogurt or milk dried into small granules, is an ancient preservation technique found across Cyprus, Greece, and the wider Balkans and Anatolia, allowing dairy and grain to be stored through winter. Cypriot households traditionally make it in late summer for use through the colder months.

Ingredients

Scale:· 4 servings
  • 1.5 cups dried trahana (fermented cracked wheat and milk)
  • 5 cups chicken or vegetable broth
  • 2 tbsp butter
  • Grated halloumi, for topping
  • Salt and pepper, to taste

Instructions

  1. 1Bring the broth to a boil in a saucepan.
  2. 2Whisk in the trahana gradually to avoid clumping.
  3. 3Reduce heat and simmer, stirring frequently, until the trahana softens and the soup thickens, about 15-20 minutes.
  4. 4Stir in butter and season with salt and pepper.
  5. 5Ladle into bowls and top with grated halloumi.
  6. 6Serve hot, especially good on a cold morning.
