The Story Behind It

The Tale of Halloumi Salad

Story updated

Halloumi cheese traces its origins to Cyprus, with references to a similar cheese dating to the medieval Byzantine period, traditionally made from goat and sheep milk and valued for its high melting point, which lets it be grilled or fried without collapsing. Salads built around grilled halloumi showcase this distinctly Cypriot cheese.

  • 2 tomatoes, sliced
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • Kalamata olives
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Fresh mint, torn
