Ingredients
- 1 cup dried red beans, soaked overnight
- 2 cups long-grain rice
- 4 oz salt pork or bacon, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 bay leaf
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
- 1Cook the soaked beans in fresh water until tender, about 45 minutes, reserving the cooking liquid.
- 2In a heavy pot, render the salt pork until crisp, then saute onion, bell pepper, and garlic in the fat.
- 3Stir in cumin and bay leaf, then add the cooked beans with about 4 cups of their liquid, adding water if needed.
- 4Bring to a boil, stir in the rice, and season with salt and pepper.
- 5Reduce heat to low, cover tightly, and simmer 20-25 minutes until liquid is absorbed and rice is tender.
- 6Let rest 5 minutes, then fluff and remove bay leaf before serving.
