Ingredients

  • 3 cups all-purpose flour
  • 1 egg
  • 2 tbsp vegetable oil
  • 1/2 cup warm water
  • 500g cottage cheese or fresh curd cheese
  • 1 egg (for filling)
  • 1/2 cup sour cream, plus more for topping
  • 1/4 cup melted butter
  • Salt to taste

Instructions

  1. 1Make the dough by combining flour, egg, oil, warm water, and a pinch of salt, kneading until smooth and elastic; rest covered for 30 minutes.
  2. 2Meanwhile, mix the cottage cheese with the egg, sour cream, and a pinch of salt to make the filling.
  3. 3Roll the dough out very thin on a floured cloth until almost translucent.
  4. 4Spread the cheese filling evenly over the dough, leaving a small border.
  5. 5Roll the dough up tightly like a jelly roll using the cloth to help guide it, then pinch the ends to seal.
  6. 6For boiled štrukli, cut the roll into segments and simmer in salted water for 15-20 minutes; for baked štrukli, place the whole roll in a buttered baking dish, pour over melted butter and cream, and bake at 190C (375F) for 35-40 minutes.
  7. 7Once cooked, cut into portions if not already done.
  8. 8Serve warm, drizzled with extra sour cream and melted butter, as a savory main or side dish.
