Ingredients

  • 3 cups basmati rice
  • 500g beef or chicken, cut into pieces
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 cinnamon stick
  • 3 cloves
  • 1 tsp ground cardamom
  • 1/4 cup ghee or vegetable oil
  • 4 cups beef or chicken stock
  • Salt to taste

Instructions

  1. 1Rinse the rice thoroughly and set aside to drain.
  2. 2Heat ghee in a large pot and brown the meat pieces on all sides.
  3. 3Add the sliced onion, garlic, and ginger, cooking until the onion is soft and golden.
  4. 4Stir in the cinnamon stick, cloves, and cardamom, toasting briefly until fragrant.
  5. 5Add the rice to the pot and stir to coat each grain in the spiced oil.
  6. 6Pour in the stock, season with salt, and bring to a boil.
  7. 7Reduce heat to low, cover tightly, and cook for 20-25 minutes until the rice is tender and the liquid is fully absorbed.
  8. 8Fluff gently with a fork before serving hot.
