Ingredients

  • 3 cups all-purpose flour
  • 1 cup coconut milk
  • 1 tbsp sugar
  • 1 tsp active dry yeast
  • 1/2 tsp salt
  • 1/4 cup shredded coconut
  • Vegetable oil, for frying

Instructions

  1. 1In a bowl, dissolve the yeast and sugar in warm coconut milk and let sit for 10 minutes until foamy.
  2. 2Add the flour, salt, and shredded coconut, mixing and kneading until a smooth, elastic dough forms.
  3. 3Cover and let the dough rise in a warm place for 45-60 minutes until doubled in size.
  4. 4Divide the dough into small balls and flatten each into a disc about 1cm thick.
  5. 5Heat vegetable oil in a wide, shallow pan over medium heat.
  6. 6Fry the discs in batches until golden brown on both sides, about 3-4 minutes per side.
  7. 7Drain on paper towels and serve warm, plain or with a savory sauce.
