Comorian Mkatra Foutra (Coconut Fried Bread)

Ingredients
- 3 cups all-purpose flour
- 1 cup coconut milk
- 1 tbsp sugar
- 1 tsp active dry yeast
- 1/2 tsp salt
- 1/4 cup shredded coconut
- Vegetable oil, for frying
Instructions
- 1In a bowl, dissolve the yeast and sugar in warm coconut milk and let sit for 10 minutes until foamy.
- 2Add the flour, salt, and shredded coconut, mixing and kneading until a smooth, elastic dough forms.
- 3Cover and let the dough rise in a warm place for 45-60 minutes until doubled in size.
- 4Divide the dough into small balls and flatten each into a disc about 1cm thick.
- 5Heat vegetable oil in a wide, shallow pan over medium heat.
- 6Fry the discs in batches until golden brown on both sides, about 3-4 minutes per side.
- 7Drain on paper towels and serve warm, plain or with a savory sauce.
