The Tale of Mondongo Colombiano
Story updated
Mondongo, a tripe and vegetable soup, traces to Spanish colonial-era offal cooking that spread throughout Latin America, with Colombia's version enriched by corn, potatoes, and plantain. It's a hearty, slow-simmered dish traditionally reserved for weekend and celebratory family meals rather than everyday cooking.
