The Story Behind It

The Tale of Daraba (Chadian Okra and Vegetable Stew)

Story updated

Daraba, an okra-based vegetable stew, draws on ingredients long cultivated across the Sahel, where okra thrives in Chad's hot, dry climate. Cooked down with tomatoes, onions, and leafy greens until thick, it's a homestyle dish typical of Chadian everyday cooking, often eaten alongside boule, the country's pounded grain staple.

Ingredients

Scale:· 6 servings
  • 2 cups sliced okra
  • 1 eggplant, diced
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 1/4 cup peanut oil
  • 1/2 lb dried fish or meat, shredded
  • Salt to taste

Instructions

  1. 1Heat oil in a pot and sauté the onion until soft.
  2. 2Add tomatoes and cook until they break down into a sauce.
  3. 3Add the eggplant and cook 8-10 minutes until softening.
  4. 4Stir in the sliced okra and shredded dried fish or meat.
  5. 5Cover and simmer 15-20 minutes, stirring occasionally, until the okra has broken down and the stew has thickened.
  6. 6Season with salt and serve with boule or rice.
