Central African Gozo (Cassava Dough)

Ingredients
- 3 cups cassava flour
- 4 cups water
- 1/2 tsp salt (optional)
Instructions
- 1Bring the water to a rolling boil in a heavy pot.
- 2Sprinkle in a portion of the cassava flour while whisking briskly to prevent lumps.
- 3Gradually add the remaining flour, stirring continuously with a sturdy wooden spoon or paddle.
- 4Reduce the heat slightly and continue to knead and fold the mixture within the pot as it thickens into a stiff, elastic dough.
- 5Cook, turning the mass over itself, for 10-15 minutes until it is smooth, glossy, and pulls away cleanly from the pot.
- 6Wet a bowl with water and press the hot dough into it to shape into a smooth mound.
- 7Turn out onto a plate and serve hot alongside a stew such as kanda or ngunza.
