The Tale of Central African Brochettes de Viande
Story updated
Brochettes, skewered grilled meat, are a common street food across Central and West Africa, sold by roadside vendors in the Central African Republic's markets and towns. The French name reflects the country's history as a French colony, though skewer-grilling itself is a much older African tradition.
Ingredients
Scale:· 4 servings
- 600g beef or goat meat, cubed
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp chili powder
- Juice of 1 lime
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- 1Combine oil, garlic, paprika, chili powder, lime juice, salt, and pepper in a bowl to make a marinade.
- 2Add the cubed meat and toss well to coat evenly, then marinate for at least 30 minutes.
- 3Thread the meat onto skewers, spacing pieces evenly for even grilling.
- 4Prepare a charcoal grill or brazier for medium-high heat.
- 5Grill the skewers, turning frequently, for 10-15 minutes until well charred outside and cooked through.
- 6Serve hot as street food, often with a spicy pepper sauce and grilled plantain or bread on the side.
