Ingredients
- 2 lbs russet potatoes, cut into fries
- Vegetable oil, for frying
- 2 cups cheese curds
- 2 cups beef stock
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- Salt and black pepper, to taste
Instructions
- 1Soak the cut fries in cold water 30 minutes, then dry thoroughly.
- 2Fry the potatoes twice: once at 325°F until soft, then again at 375°F until golden and crisp.
- 3Melt butter in a saucepan and whisk in flour to make a roux.
- 4Whisk in beef stock and Worcestershire sauce, and simmer until thickened into a gravy.
- 5Season the gravy with salt and pepper.
- 6Pile the hot fries onto plates, scatter cheese curds over the top, and ladle hot gravy over everything.
- 7Serve immediately while the curds are still slightly melty.
