Kuy Teav (Pork and Rice Noodle Soup)

Ingredients
- 2 lbs pork bones
- 1/2 lb pork belly
- 8 cups water
- 1 onion, halved
- 2 tbsp dried shrimp
- 2 tbsp rock sugar
- 1 lb rice noodles
- 1/2 lb ground pork, cooked and crumbled
- Bean sprouts, fried garlic, cilantro, and lime wedges, for serving
- Fish sauce, to taste
Instructions
- 1Simmer pork bones and pork belly in water with onion and dried shrimp for at least 90 minutes, skimming foam regularly.
- 2Remove the pork belly once tender, slice thinly, and set aside.
- 3Strain the broth and season with rock sugar and fish sauce to taste.
- 4Blanch rice noodles in boiling water until tender, then divide among bowls.
- 5Top with sliced pork belly and crumbled ground pork.
- 6Ladle the hot broth over the noodles.
- 7Garnish with bean sprouts, fried garlic, and cilantro, and serve with lime wedges.
