Burundian Mandazi (Fried Sweet Bread)

Ingredients
- 4 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp ground cardamom
- 1 cup coconut milk
- 2 tbsp vegetable oil, plus more for frying
- 1/4 tsp salt
- Water as needed
Instructions
- 1In a large bowl, whisk together flour, sugar, baking powder, cardamom, and salt.
- 2Add coconut milk and oil, mixing until a soft, slightly sticky dough forms, adding a splash of water if needed.
- 3Knead the dough on a floured surface for 5 minutes until smooth and elastic.
- 4Cover and let it rest for 30 minutes.
- 5Roll the dough out to about 1cm thickness and cut into triangles or diamonds.
- 6Heat oil in a deep pan to medium heat and fry the mandazi in batches until golden brown and puffed, turning once, about 3-4 minutes per batch.
- 7Drain on paper towels and serve warm, plain or with a cup of spiced tea.
