Burundian Mandazi (Fried Sweet Bread)

Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1 cup coconut milk
  • 2 tbsp vegetable oil, plus more for frying
  • 1/4 tsp salt
  • Water as needed

Instructions

  1. 1In a large bowl, whisk together flour, sugar, baking powder, cardamom, and salt.
  2. 2Add coconut milk and oil, mixing until a soft, slightly sticky dough forms, adding a splash of water if needed.
  3. 3Knead the dough on a floured surface for 5 minutes until smooth and elastic.
  4. 4Cover and let it rest for 30 minutes.
  5. 5Roll the dough out to about 1cm thickness and cut into triangles or diamonds.
  6. 6Heat oil in a deep pan to medium heat and fry the mandazi in batches until golden brown and puffed, turning once, about 3-4 minutes per batch.
  7. 7Drain on paper towels and serve warm, plain or with a cup of spiced tea.
