The Story Behind It

The Tale of Banitsa

Story updated

Banitsa, a flaky phyllo pastry filled with cheese and eggs, has roots in the broader Ottoman-influenced Balkan pastry tradition shared with Turkish börek and Greek tyropita. In Bulgaria it holds special significance at New Year's, when paper fortunes are baked inside individual slices.

Ingredients

Scale:· 8 servings
  • 1 lb phyllo dough, thawed
  • 1 lb sirene or feta cheese, crumbled
  • 4 eggs
  • 1 cup plain yogurt
  • 1/2 cup melted butter, plus more for brushing
  • 1/4 cup sparkling water

Instructions

  1. 1Whisk eggs, yogurt, melted butter, and sparkling water together.
  2. 2Crumble the cheese into the egg mixture and stir gently.
  3. 3Crumple each phyllo sheet loosely and layer into a buttered round baking dish, spooning some of the egg mixture over every couple of layers.
  4. 4Continue until all the phyllo and filling are used, finishing with egg mixture on top.
  5. 5Bake at 375°F for 40-45 minutes until deep golden and puffed.
  6. 6Let rest 10 minutes before slicing into wedges and serving warm.
