Ingredients

  • 1 lb black beans, soaked overnight
  • 1/2 lb smoked pork ribs, cut into pieces
  • 1/2 lb linguiça sausage, sliced
  • 1/2 lb carne seca (dried salted beef), soaked and cubed
  • 4 oz bacon, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Cooked white rice, for serving
  • Orange slices and sautéed collard greens, for serving

Instructions

  1. 1Drain the soaked black beans and set aside.
  2. 2In a large heavy pot, heat olive oil and sauté the bacon until crisp.
  3. 3Add the onion and garlic and cook until softened, about 5 minutes.
  4. 4Add the pork ribs, linguiça, carne seca, bay leaves, and beans, then cover with water by 2 inches.
  5. 5Bring to a boil, then reduce heat and simmer uncovered for 2 1/2 to 3 hours, stirring occasionally and adding water as needed, until the beans are thick and creamy.
  6. 6Season with salt and pepper to taste and remove the bay leaves.
  7. 7Serve hot over white rice with orange slices and sautéed collard greens.
