The Story Behind It

The Tale of Farofa

Story updated

Farofa, toasted cassava flour, draws on cassava's status as a crop native to Brazil and cultivated by Indigenous Tupi-Guarani peoples long before European contact. Toasted and often mixed with butter, bacon, or eggs, it became a standard accompaniment served alongside nearly every classic Brazilian meal.

Ingredients

Scale:· 6 servings
  • 4 tablespoons butter
  • 1/2 onion, finely chopped
  • 4 strips bacon, chopped
  • 2 cups manioc (cassava) flour
  • 2 tablespoons chopped parsley
  • Salt, to taste

Instructions

  1. 1In a skillet, cook the bacon over medium heat until crisp; remove and set aside, leaving the fat in the pan.
  2. 2Add the butter and onion to the skillet and sauté until softened.
  3. 3Return the bacon to the pan and stir in the manioc flour gradually.
  4. 4Toast the flour, stirring constantly, for 8-10 minutes until golden and fragrant.
  5. 5Season with salt, stir in parsley, and serve alongside feijoada or churrasco.
