The Story Behind It

The Tale of Baião de Dois

Story updated

Baião de dois, a rice and bean dish often made with cheese and dried meat, hails from Brazil's Northeast, where its name references a regional musical rhythm associated with rural sertanejo culture. It reflects the resourceful, cheese- and meat-forward cooking traditions of Brazil's semi-arid interior.

  • 1 cup queijo coalho, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
