Bogobe (Botswanan Sorghum Porridge)

Ingredients
- 2 cups sorghum meal
- 6 cups water
- Pinch of salt
- 1 cup sour milk or maas (optional, for bogobe ba lerotse)
Instructions
- 1Mix a cup of the sorghum meal with a cup of cold water to make a slurry.
- 2Bring the remaining water to a boil with a pinch of salt.
- 3Stir the slurry into the boiling water, whisking to avoid lumps.
- 4Reduce heat and simmer, stirring frequently, for 30-35 minutes, gradually adding the remaining sorghum meal until thick and smooth.
- 5If making the soured version, stir in sour milk once the porridge has cooled slightly.
- 6Serve warm as a breakfast porridge or alongside a meat stew.
