Ingredients

  • 8-10 green chilies, sliced lengthwise
  • 2 tomatoes, chopped
  • 1 onion, sliced
  • 2 cups datshi (Bhutanese cheese) or a mix of cheddar and farmer cheese
  • 2 tbsp butter
  • 1/2 cup water
  • Salt, to taste

Instructions

  1. 1Combine the sliced green chilies, tomatoes, and onion in a pot with water and butter.
  2. 2Bring to a simmer and cook until the chilies begin to soften, about 8-10 minutes.
  3. 3Add the cheese and stir gently as it begins to melt into the vegetables.
  4. 4Continue simmering on low heat, stirring occasionally, until the sauce is thick and creamy and the chilies are tender, about 8-10 minutes more.
  5. 5Season with salt to taste.
  6. 6Serve hot with a generous portion of red rice.
