Ingredients

  • 1/2 lb salted cod, soaked and desalted
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 onion, finely chopped
  • 2 scallions, chopped
  • 1 scotch bonnet pepper, minced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 egg
  • 3/4 cup water
  • Vegetable oil for frying
  • Salt and black pepper to taste

Instructions

  1. 1Soak the salted cod overnight, changing the water, then boil for 10 minutes and flake finely, removing bones and skin.
  2. 2Whisk flour, baking powder, egg, and water into a thick batter.
  3. 3Fold in the flaked fish, onion, scallions, scotch bonnet, garlic, and thyme, and season with black pepper.
  4. 4Heat oil to 350F in a deep skillet.
  5. 5Drop spoonfuls of the batter into the hot oil and fry for 3-4 minutes, turning once, until golden and cooked through.
  6. 6Drain on paper towels.
  7. 7Serve hot with pepper sauce, a classic Bajan snack.
