Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup butter, softened
  • 3/4 cup water
  • 1 1/2 cups fresh guava pulp, seeded and mashed
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 cup butter (for sauce)
  • 1 cup sugar (for sauce)
  • 1/4 cup rum
  • 1 egg (for sauce)

Instructions

  1. 1Mix flour, baking powder, and salt, then cut in butter until crumbly; add water to form a soft, elastic dough and roll into a large rectangle.
  2. 2Combine guava pulp, sugar, and cinnamon, and spread evenly over the dough.
  3. 3Roll the dough up tightly like a jelly roll, sealing the ends.
  4. 4Wrap the roll tightly in cheesecloth and tie the ends, then steam over simmering water for about 1 hour until firm and cooked through.
  5. 5For the sauce, melt butter with sugar over low heat until dissolved, then whisk in the egg and rum off heat until smooth and glossy.
  6. 6Unwrap the cooked duff and slice into rounds.
  7. 7Serve warm, drizzled generously with the rum butter sauce.
