The Tale of Lamington
Story updated
The lamington is named for Lord Lamington, Governor of Queensland from 1896 to 1901, with legend crediting his cook with inventing the chocolate- and coconut-coated sponge cake by accident, though the exact story is more folklore than documented fact. It remains one of Australia's most iconic teatime treats.
