The Story Behind It

The Tale of Choripán

Story updated

Choripán, grilled chorizo in crusty bread, emerged from Argentina's asado culture as a quick, portable way to enjoy sausage fresh off the grill while the main cuts finished cooking. Today it's a fixture at soccer stadiums, roadside stands, and asados across the country, usually topped with chimichurri.

Ingredients

Scale:· 4 servings
  • 4 chorizo sausages
  • 4 crusty bread rolls, split
  • 1 cup chimichurri sauce
  • 1/2 cup salsa criolla (diced tomato, onion, and vinegar)

Instructions

  1. 1Grill the chorizo sausages over medium-high heat, turning occasionally, for 12-15 minutes until cooked through and browned.
  2. 2Optionally, butterfly each sausage lengthwise for extra crispiness and grill 2 more minutes.
  3. 3Lightly toast the bread rolls on the grill.
  4. 4Place a sausage inside each roll.
  5. 5Top with chimichurri sauce and salsa criolla.
  6. 6Serve immediately while hot.
