Antiguan Saltfish with Onions and Peppers

Ingredients
- 1 lb salted cod, soaked overnight and drained
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, minced (seeds removed for less heat)
- 3 tbsp vegetable oil
- 1/4 tsp black pepper
- Fried plantain or bread for serving
Instructions
- 1Soak the salted cod in cold water overnight, changing the water once or twice, then drain and rinse well.
- 2Simmer the cod in fresh water for 10 minutes to remove excess salt, then drain, cool, and flake it into pieces, discarding any bones or skin.
- 3Heat oil in a skillet and sauté the onion, garlic, and scotch bonnet pepper until fragrant.
- 4Add the sliced bell peppers and cook until they begin to soften.
- 5Stir in the chopped tomatoes and cook until they break down into a light sauce.
- 6Add the flaked saltfish to the pan and toss gently to combine with the vegetables.
- 7Season with black pepper and cook for another 5 minutes until heated through.
- 8Serve hot with fried plantain, bread, or johnnycakes.
