Ingredients
- 1 lb conch meat, tenderized and minced
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 egg
- 1/2 cup milk
- 1 small onion, finely diced
- 1/2 bell pepper, finely diced
- 1 clove garlic, minced
- 1 tsp fresh thyme leaves
- 1/2 scotch bonnet pepper, minced
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- 1Tenderize the conch meat by pounding it well, then mince it finely.
- 2Whisk together the flour, baking powder, egg, and milk to form a thick batter.
- 3Fold the minced conch, onion, bell pepper, garlic, thyme, and scotch bonnet pepper into the batter.
- 4Season with salt and pepper and mix well.
- 5Heat about 2 inches of oil in a deep skillet to 350°F.
- 6Drop spoonfuls of the batter into the hot oil and fry until golden brown and cooked through, about 3 to 4 minutes, turning once.
- 7Drain the fritters on paper towels.
- 8Serve hot with a spicy dipping sauce or lime wedges.
