Antiguan Conch Fritters

Ingredients

  • 1 lb conch meat, tenderized and minced
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 egg
  • 1/2 cup milk
  • 1 small onion, finely diced
  • 1/2 bell pepper, finely diced
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves
  • 1/2 scotch bonnet pepper, minced
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. 1Tenderize the conch meat by pounding it well, then mince it finely.
  2. 2Whisk together the flour, baking powder, egg, and milk to form a thick batter.
  3. 3Fold the minced conch, onion, bell pepper, garlic, thyme, and scotch bonnet pepper into the batter.
  4. 4Season with salt and pepper and mix well.
  5. 5Heat about 2 inches of oil in a deep skillet to 350°F.
  6. 6Drop spoonfuls of the batter into the hot oil and fry until golden brown and cooked through, about 3 to 4 minutes, turning once.
  7. 7Drain the fritters on paper towels.
  8. 8Serve hot with a spicy dipping sauce or lime wedges.
