The Tale of Algerian Couscous with Lamb and Vegetables
Story updated
Couscous originated with North Africa's Berber people, with steamers resembling modern couscoussiers found in 3rd-century-BCE Numidian tombs in what is now Algeria. Durum wheat semolina, rolled and steamed over a simmering stew of lamb and vegetables, became a staple prized for feeding families through harsh desert seasons. UNESCO recognized it as shared regional heritage in 2020.
